After more than 10 years of being shocked by the deliciousness of homemade flour soba, my wish came true and I started making ``stone-ground homemade flour''. Gensoba is purchased from Tsushima, Nagasaki Prefecture, and peeled. Grinding only the amount you will use on the day improves the flavor. The ingredients are carefully selected, such as wild yam yam soba from Karatsu, Saga Prefecture, and spicy grated radish soba from Shinshu and Shizuoka. We meet directly with producers as much as possible to purchase food, and strive to provide food that is safe. Please enjoy our soba noodles.

We purchase carefully selected domestically produced mullet eggs in late autumn every year, carefully drain the blood from each one, and handcraft them using our unique manufacturing method.
