The restaurant's name, Hyakushiki, is inspired by the numbers 1 and 8 used in the name of the restaurant where he trained, which, when placed vertically, make 100 (1 and ∞ placed horizontally also make 100!). Fresh seafood is sourced from Meinohama Fishing Port, and fresh vegetables are lined up in the sushi display case. In front of the counter are bottles of soft drinks, highballs, soda for mixing, oolong tea, and water, which are submerged in water, so you can mix them as you like, and when you pay, you pay by the number of bottles or completes.
