He primarily uses natural local fish from Fukuoka Prefecture, such as tuna directly shipped from places like Ohata and Oma in Aomori Prefecture, and Shiogama City in Miyagi Prefecture, as well as seasonal ingredients like sea urchin from Hokkaido.

Sushi master Izumi, with 33 years of experience, carefully selects fresh seafood from the fish market, focusing on natural catches from Fukuoka Prefecture and seasonal flavors from across the country.... The rice is made with "Genki Tsukushi" from Kurume, Fukuoka, and finished with red vinegar. Emphasizing the importance of "adding a little extra touch," you can enjoy unique flavors here.
They offer only the "Souten Omakase Course" for both lunch and dinner. Lunch features mainly sushi, while dinner includes mini rice bowls, side dishes, and grilled items in addition to sushi. Reservations are required.
