...with Junichi Fujimoto, a fisherman from Oshima, who is well-known nationwide, and often accompanies him on fishing trips to hone his skills in selecting fish. The same goes for vegetables and river fish. He relentlessly pursues the ingredients he believes in, providing them without being constrained by fixed notions. The blessings unique to Ehime come from the best producers who put their heart into their work. The originality that brings out the power of the ingredients is truly impressive, free from the constraints of traditional Japanese cuisine.
