..., he shares, "Edo-mae sushi is something I admire. However, I strive to pursue a style of sushi that can only be found in Ehime." He maintains a close relationship with sushi chefs in Tokyo, constantly researching and incorporating Edo-mae techniques when necessary. On the other hand, his sushi, which primarily features fish sourced from local fisherman Junichi Fujimoto, showcases the unique flavors of Matsuyama, prepared with minimal alteration to highlight the quality of the ingredients.
