The more you move between markets, the higher the price will be, and the more time will pass. Although they claim to be direct from the farm, the long-distance delivery from Kyushu and Hokkaido inevitably takes time, and the freshness of the product decreases. Therefore, Zetsukai is particular about using fish directly from the nearby Katahara Fishing Port in Mikawa Bay, which is said to be a treasure trove of fish species, and fish that are larger than the standard, or only eaten by locals, or are caught in small quantities and end up on the market.
