Food Eel specialties
We "purchase" eels that are kept in the best condition by minimizing stress on the delicate eels using underground water from the Kiso Three Rivers. We use Japanese eels, which contain a lot of high-quality fat and have thick, large meat. Our unique cooking method removes only the excess fat, achieving the right amount of juiciness and a "crispy, fluffy" texture.
SpaceAttention to space
All seats are private. We have 13 rooms available. Each room is decorated with a floral motif. Enjoy a special time while feeling the atmosphere. Our restaurant has wide spaces from the entrance to the corridors, each room, and the restrooms, so customers with strollers and wheelchairs can use them with peace of mind.
Food Special attention to condiments
"Shiso Miso" is a miso made by the owner after years of research to bring out the deliciousness of eel when combined with soybean miso from Nishio City, Aichi Prefecture. "Hida Sansho" is a premium "Kogen Sansho" variety that grows only in Okuhida Onsenkyo, Gifu Prefecture. Its small berries are characterized by a high content of refreshing citrus aroma components compared to other varieties.
ServiceAttention to detail in tableware
The rice containers used in the Hitsumabushi Tokujo are made from the same Zelkova wood as the restaurant's name, and to further accentuate the eel, each one is carefully finished in the Zelkova red by a Yamanaka lacquer artisan from Ishikawa Prefecture. Please enjoy picking up our original, custom-made lacquerware.
