2018/7/14 千葉県八千代市勝田台ツアー2件目は、和酒dining雲母さん、前回はもちろん未訪。
丸い灯りが酒蔵の杉玉が枯れて、飲み頃を意味してる、と勝手に思う。そんなオシャレな入り口。
中に入ると照明落とし気味で雰囲気が大変気持ち良い。そして接客する女将はお酒に詳しい。
お摘みは、オカラの煮付けは上品な味わい、お酒に良く合う味になっている。
カマンベールチーズの燻製は手の込んだ逸品。大葉と共に食べるとマッチングが楽しめる。
牛すじの煮込み辛みは、少しピリ辛がお酒を邪魔せず飲めて食べれる逸品に仕上がっている。
ポテサラは、よくあちらこちらで味わうが醤(ヒシオ)は初めてのマッチング。
つくね3種盛りはこちらも全てマッチングの世界である。そのどれもが絶妙に美味い。
たぬき豆腐。。言わずもがな揚げ玉が掛かっている、これも豆腐と揚げ玉がクロスしている。
牛サガリの串焼きは、牛サガリの旨味を引き出す職人ワザである。
日本酒の品揃え半端無く、そのどれもが女将が説明してくれる。相当勉強しなくてはここまで言えない。
お酒のメニュー品揃えは試飲をして決めているとの事で、説明はもちろん言えても、
それを人に伝えるのは中々至難のワザであるし、また、それもスラスラと言えるのには驚いた。
我ら飲み友達も日本酒に詳しいが、その上を行かなくては質疑応答にならない。
知ってる日本酒は、3品(るみ子の酒、神亀、いずみ橋)くらい。後はヘェ〜、ほう〜で終わる。
3人だからこそ、これだけのお酒が味わえたのだ。友達に乾杯。
このお店は、素材の良さも判りつつ、手を加え、マッチングさせ、味わい深くしていると感じた。
