いつの間にか切り番でしたので、相棒と久々出掛けた平花の和食処をご紹介します。
秋田県南でお邪魔する機会がなかなか無く、今回は宿泊と夜のお楽しみのバー巡りは湯沢と決めて居ました.
しかしメインの食事のお店が中々ピンと来る所が無くて漸くこちらに辿り着きました。
こちらは住宅街の中の創作日本料理で、こじんまりとした外観。
店舗前の駐車場に車を停めての暖簾を潜ります。
予約時に、先約一杯で、2時間限りのカウンター席しか空かないとの事。地元の方々で繁盛してますね。
でも調理垣間見える特等席です。手書きのご挨拶がお出迎え。
相棒はノンアルビールで私は生で乾杯。畳敷きの広い座席が座り易くて助かります。
若い親方が、先付けの豆乳豆腐と揚げ出しの舞茸添えを出して頂きました。
豆乳のまるでプリンの様な滑らかなお豆腐はお腹に優しい。
揚げ出しも舞茸の味が活きて居てあっという間にビールが消えました。
ここで日本酒にシフトして刈穂が無いので同じ蔵の六舟を頂きます。
旬の筍の煮物は筍が厚過ぎず、飾り切りの人参も良く煮含められて居ます。
しかも味付けは親方の京での修行宜しく上品な仕上がりです。
長皿で何が出で来たのかと思えば、黒ムツの昆布巻きでした。
黒ムツの白身に炊き込んだ昆布の拍子木・おろし・山葵を巻いて頂きます。
さっぱりして居て酒が進みます。
揚げたジャガイモと里芋の真薯は食感が変わって面白く、生クリームで延ばした西京味噌が優しく滲みます。
親方が近寄り、活伊勢海老をお好みで調理して頂けると言う事。
せっかく2尾なら、1尾はお造りにし1尾は鬼殻焼きにして貰います。
出来上がるまでの間にお造りを頂きます。お造りは、本鮪・雲丹・桜鯛です。
包丁も冴え、仕入れも吟味された素性の良い粒選りでした。
ここでオリジナルラベルのワインの白をボトルで追加します。
さて、伊勢海老お造りですが身がプリプリで、流石に活伊勢海老ならでは甘味が凝縮して居て頗る旨し。
鬼殻焼きは味噌と芳ばしく焼かれて生生の時より更に甘さが際立ちます。
お次の登場は、紅の豚 成る逸品です。地元産のシルクポークをトマトテイストのイタリア仕立てです。
良く煮込まれて居ながら、柔らかであっさりとした仕上がりです。
更にここで小鍋仕立てが運ばれ、卵とじ故に見当も付かず親方の出番です。
和歌山県産シラスの小鍋との事で、シラスと玉ねぎの食感が素敵な優しさが沁みます。
脂の乗った本カマスの若狭焼きと立派なホタテ焼きと揚げナスが追い掛けます。
〆は土鍋の桜海老の釜飯が、シラスや筍同様旬の食材を生かす親方の工夫が光ります。
デザートはチーズケーキとお薄を頂きコースがエンディングを迎えます。
粋な親方の確かな仕事と工夫の効いた創作料理の融合が素晴らしい。
接客も良く、包み込まれる様な心地良い上質空間が有りました。
