豊橋駅から徒歩5分程度の場所にありますお鮨屋さんです。
地元情報誌で最近オープンしたと知り伺いました。
一般的に鮨職人さんというと長い修行を要しますが、こちらのお店は短期間で学べる鮨学校出身の方の方がやられています。
結構メディアに出て有名な大阪の「鮨千陽」さんはそちらの学校運営で、こちらは名古屋校出身の方がオープンされたそうです。
店内はL字形のカウンター席が15席程度でしょうか、奥行きが広く席間も広めに取ってあるので落ち着いて飲食できそうな雰囲気です。
メニューはコースが3500円と7000円があり、今回は7000円の方を注文しました。コース以外にも単品メニューもあるようなので1軒目使いや〆に使うということも出来そうですね。
つまみからスタートです。お刺身は鮪とコチ。厚めに切られており質もいいと思います。
蛤の椀物はプリプリな巨大蛤と出汁が美味しい。
つまみが終わると握りのスタートです。
最初にネタ箱を見せて頂けます。
綺麗に並べられたネタの数々は圧巻ですね!しっかりと仕事が施された江戸前鮨が頂けそうです。
シャリは正直少し弱いかなという印象ですが、ネタはどれも漬けたり酢締め、焼く煮る等仕事がされて、豊橋でこういうお鮨が食べられるとは嬉しい限りです。
日本酒もいろいろ揃っているので楽しめますね。
豊橋で本格的な江戸前鮨が食べられるお店はなかったので嬉しい限りです。これからもがんばって欲しいお店です。
