◆出色の一皿に変えて
料理は悪くないが
ここより美味しい割烹を挙げるのは難しくない。
ただプレゼンテーションは秀逸。
一抱えもある大きな盆に載って供される八寸や
白い湯煙と共に登場する本鱒と春の苦味鍋や
女将が目の前で点ててくれる抹茶など
目と心を酔わせる演出が実に巧みだ。
加えて、元は能楽師の家だった
大正末期の古民家と云う蘊蓄ある舞台装置に、
1日昼夜2組ずつの客のみ、しかも千駄木と云う渋い土地柄の
唯一無二のプライベート感、
女将を筆頭とする
品の良い心尽くしのおもてなし‥
蒔いた”料理”と云う麹が
類稀な舞台装置や上質のおもてなしで好い塩梅に醸されて
『 一二三庵 』と云う淡麗な美酒となる‥
