◆出色の一皿 ホンムンヤンロウ/ラム肉と大根の醤油炒め煮
料理そのものや
食材、調味の組合せが半ば未知のコースの顔ぶれは
どれもエキサイティングで楽しいが、
これぞお家芸!の美味しさは
本家の味坊同様、やはりラム肉のメニューに有った。
ホンムンヤンロウと云う鉄鍋だ。
ラム肉の肩ロースを大根と共に炒めて
鶏出汁と醤油でじっくり煮込むらしい。
鍋に貼り付けて作るトウモロコシ粉の丸餅や
いわば具なしの中華まん、ねじりのかわいい花巻も一緒に食べる。
ラム肉の肩ロースの
もっちりと跳ね返すラフテーのような食感、
口の中に立ち込める香りの良さ、
鶏出汁と醤油のタレの凝縮した甘さに
その出汁をたっぷり吸い込んだ
大根や丸餅、花巻三者三様の口当たりと味わい‥
実に良く出来た鍋である。
次回も、このホンムンヤンロウを必食に据えて
別の鍋も試してみたい ٩(●˙▿˙●)۶

神田の人気中華、味坊の姉妹店。
中国・東北地方の鉄鍋で作る煮込み料理の専門店。
北京の五つ星ホテルでの料理長経験も有る張子謙氏が腕を振るう。

コースのみ、お任せ前菜5種と鍋1種類、デザートの3500円、
お任せ前菜7種と鍋2種類、デザートの5000円の2種類。
いずれも鍋は6種類程から選べる。
個人的には鍋は食べ較べの楽しめる5000円の方がお薦め。
鍋の必食はホンムンヤンロウ/ラム肉と大根の醤油炒め煮。
ドリンクはビール600円、グラス紹興酒500円、
ワインはボトルのみで3500円より。

湯島の裏通りに潜む、
味坊の2号店らしからぬ(笑)
小さいながらもクリーンな店。
