四ツ谷駅より西の位置。1本中に入った交差点の
角にある三谷へ伺いました。
シンプルな外観です。ダークグレイの壁に黒の
扉。とてもお鮨屋さんとは思えないでしょう。
店内入りガラスの壁を通して奥に白木造りの
L字カウンター8席。三谷さんチーフらしく
赤いエプロン着用で深々と出迎えて下さいます。
良い香りが漂っています。今年は豊作であった
松茸。気仙沼産とのことです。
お昼でしたので飲む予定はなかったのですが
こちらに伺って飲まない!はないでしょう?と

お料理に合わせて個性豊かに供されてきます。

いつの間にかヘロリン~(^^)
三谷さん、お訊ねする事には明確!求める倍の
回答をされます。相当に研究熱心な上、大変な
努力家であることが伺えます。
シャリは赤酢と黒酢のブレンド使い。酢のたちは
至ってマイルド。勿論、シャリの温度にも気を使われて
お湯をはったお櫃までが登場。握り具合もホロ~リ。
北海道産の古米を使われています。試行錯誤した結果、
これが微妙な酢の吸収をされるということです。
出てまいりました!!究極の卵かけごはん!
イクラを濾して液状にしたもの。上にはかための
酢飯がon。手が込んでるわぁ。アッサリと濃厚。
一体何種類のアルコールをいただいたのかしら?
写真も撮り忘れているのですがザッと数えても
10種類以上。多種を少しずつってのがイイです。
これって量にしたら…(?_?)恐ろしや~。
美味しいだけじゃ満足できない。のが本音。
丁寧な仕事に芸術的で尚且つアカデミック!
自分好みにはドンピシャです☆☆☆
次回もまた長ーく待つことに…。
