麻布十番の更科御三家の一店になります。
訪問するのはこれで2回目になります。
当然、御前そば(さらしな)を注文しました。
[蕎麦の項でよく書くのですが特に初めて訪問した際はせいろそば(もりそば)のみを注文します。
まずは蕎麦のみを食べて味と香りを確認しそれからつけ汁を直接飲んでかえしのコクや熟成具合、出汁の配分等を確認してつけ汁にはねぎも山葵も入れないで食します。後半になってねぎを投入し山葵は蕎麦に直接付けてつゆに山葵が触れて溶けない様に食します。]
こちらは総本家更科堀井 本店さんと違って最初からつけ汁があま汁とから汁と2種類出て来ますが説明書によるとブレンドしてくれとの事ですがあま汁は塩分濃度ではなく単純に甘味の甘さを差していてお猪口に少し入れて飲んでみましたが甘過ぎます。
から汁はかえしのコクもあり良い塩梅なのでブレンドせずにから汁のみのちょん漬けで召し上がる事をお薦めします。
そば自体は更科の割にしっかりと蕎麦の風味があり良いと思いますがあま汁は不要かと。
