We use Okukuji Shamo, a branded chicken from northwestern Ibaraki Prefecture that is raised freely in a spacious chicken coop and playground in a lush mountain village! This is a breed that is a combination of a male gamecock and a hen that is a cross between a Rhode Island Red and a Nagoya Cochin, and is characterized by its muscular structure and elasticity when chewing. The meat is firm and delicious, and you can enjoy the flavor and texture that you can't get with regular chicken. The low fat content and non-sticky texture are also popular points.

Mr. Keiichi Chino has studied at a famous store in Ginza and has mastered the skill. He is so particular about purchasing whole chickens that he wants to "separate the meat from the bone without destroying the fibers of the meat." There are two types of courses created by the owner. The most popular ``Course B'' is very satisfying with 16 dishes in total, allowing you to enjoy various parts of Okukuji gamecock.
