There are various suppliers for each material, including Toyosu Market, the owner's hometown of Ishikawa Prefecture, Hokkaido, and Kyushu. By building strong relationships of trust with local vendors, we are able to provide our customers with seasonal ingredients without missing out on them. In addition, we use rice from Noto, which is blessed with abundant nature, for the sushi rice. Using only red vinegar and salt, we have created a sushi rice that is full of powerful flavor. Please enjoy this gem of a dish with a rich flavor combined with high-quality ingredients.

There are 10 seats at the plain wood counter, which is made of a single, slender Japanese cypress board.
