ChefMr. Hideo Yamamoto (Hideo Yamamoto) A chef who deals seriously with ingredients
Born in Tokyo in 1980, he started his career at the age of 22 at Shoto's ``Chez Matsuo Aoyama Salon.'' After training at several Restaurants in Tokyo and Kanagawa Prefecture, he participated in the launch of Ebisu's `` Bistro Ma'' at the age of 28, and became the chef two years after opening. In 2015, when Ale opened, he became the chef.

The first appetizer (specialty) focuses on seafood such as shrimp, shellfish, salmon roe, and snow crab. We prepare our food as if it were a flower blooming in a glass, and deliver deliciousness and excitement to everyone.
