2015年2月 下旬 再訪
しばらくぶりの投稿です。(今日から復活します)
先日「たかむら」が食べログで表彰されたと聞き、お祝いに伺いました。
祝賀会場でフレッシュ黒トリュフの入手ルートを開拓してきたとの事で、
この日は「黒トリュフ祭り」でした!
(あくまで和にこだわり、洋食にならないように腐心されていました。)
(1)「先出し」 子持ちこんぶ、ほたるいか、飯蛸、つぶ貝旨煮、卵焼き
(2)鮑塩蒸し (八森産) 定番
(3)「椀もの」 だいこんの薄切りのせ
(4)「お造り」 水蛸、赤貝(閖上産)、鯛
(5)「焼物」 ほたて焼き(ぱりぱりののりで手巻きにして食します)
(6)牛たん トリュフソース煮込み じゃがいものピューレ添え
トリュフとじゃがいもの相性が抜群で、パンが欲しくなりました。
(7)とらふぐの白子焼き
(8)黒トリュフコロッケ 海老芋チップのせ
まさに、トリュフ爆弾、香りが口中に広がり、鼻に抜けて・・・
(9)からすみご飯 出汁をかけて
(10)「甘味」豆腐 抹茶掛け
最近は日本酒も充実していて、人気急上昇中の新政のカラーズも揃えてます。
瑠璃(ラピス)2014 、生成(エクリュ)2014
と、山本 うきうき を頂きました。
いずれも酸味が特徴的で、今日の食事に「ぴったり」。

まだ暑いですが、せめて食事だけでも「秋を早取り」するため、伺いました
(1)「先出し」 新銀杏、つぶ貝旨煮、卵焼き、眞子鰈の握り
(2)煮鮑 (八森産)
(3)たかむら名物特製最中
(4)「椀もの」 松茸、鱧、冬瓜
(5)「お造り」 水蛸、鮪、眞子鰈
(6)「焼物」 柳鰈?(なんとか鰈と説明されました)
(7)蛤の飯蒸し : 旨みが凝縮していて、美味しかったです
(8)「煮物」子持ち 鮎、南瓜、なんとかとうがらし?(京野菜です)
(9)松茸フライ : あつあつ言いながら手で裂くと、香りが爆発!! まだ中国産との事でした
(10)特製真烏賊の塩辛御飯 出汁をかけて
(11)「甘味」 氷豆腐 黒蜜
新銀杏、松茸と秋を早取りできました!!
自分は、器の良しあしはよく分からないのですが、全体的に「器」がグレードアップしていました

食べログをはじめて半年たちました
この間何度か「たかむら」に電話しましたが、毎回満席 ・ ・ ・
( いつもの様に一週間前の予約が良くないのでしょうが ・ ・ ・ )
てな事で、しばらくぶりに伺いました
(1)「先出し」 鮟肝、つぶ貝旨煮、天然子持昆布、卵焼き
(2)鮑塩蒸し
(3)紫雲丹のゼリー寄せ : 雲丹の甘みがまします!
(4)「椀もの」 海老とにら(?)と菊(?)のお吸い物 : 出汁が体にしみ入りますが、色合いも素敵です
(5)「お造り」 小肌、あいなめ、鮪
(6)「焼き物」 甘鯛
(7)賀茂ナス、蟹あん : 定番、お気に入り
(8)蛸のやわらか煮
(9)アオリイカのフライ
(10)じゃこ飯
(11)琵琶ゼリー : 最近食べたデザートの中で一押し! 上品な甘み
いつも変わらぬ丁寧な仕事、どの料理も美味しく、外れ無し
遊び心もあって、イカフライなんか出たりします
( これが美味しかったりするので、さらに驚き! )
